Waitrose educates about fish

Waitrose Interactive Fish

Waitrose supermarket is providing their customers with lots of information about fish. Their website has become a teaching tool for those who are still scared of cooking fish and answers for those who are worried about ethics, sustainability and responsible sourcing.

 There is also an interactive tool, where you can discover the selection that Waitrose has to offer at their counters, with photos and explanations about each fish and recipes explained with step-by-step videos to follow.

 
Cooking fish in 3 easy steps
 Waitrose has also introduced at their supermarkets fish counters “Waitrose garnish & go”, for those that have no time to cook or do not know how to cook fish. In just three easy steps, you can have a great tasting fish supper:
1- Choose your fish and a free flavoured butter from the fish counter
2- They’ll garnish and seal your fish in a ready-to-cook bag
3- Take it home and bake it in the bag.

Any fish can be chosen from Waitrose’s service counter selection, including salmon fillets, plaice fillets, sea bass, smoked haddock, halibut steaks and whole trout along with a complimentary flavoured garnish. Your selections can be cooked to perfection according to the instructions on the sealed bag, simply cut open and serve.

When it comes to sustainability, Waitrose only sells sustainable fish, with the following criteria:
 
Be a species that is not regarded as threatened or endangered
Be caught from a well managed fishery with scientifically based quota's
Be caught using responsible fishing methods
Be fully traceable from catch to consumer

Waitrose does accept third party certification such as MSC (Marine Stewardship Council) as evidence of sustainability, but such schemes are currently insufficient to cover the full range of fish that Waitrose sells.

Referring to the recent awareness brought by the film the End of the Line. Mark Price, Waitrose Managing Director, commented “With many species on the brink of extinction, there has never been a more pressing need to bring this issue to the fore. The End of the Line shows that we can all enjoy fish, but encourages us all to think more carefully about where it's coming from.”

Waitrose has been awarded with the Seafood Multiple Retailer of the Year 2009.
