It all began in 1892…
when the original Paul Piazza began selling shrimp, fish and wild game in New Orleans’ French Market. As his reputation for quality grew, he upgraded to his own permanent stall in the famous market.?
Over the years, the business grew and expanded to what now occupies a full square block in the historic area of New Orleans.
Ironically, the tragedy of Hurricane Katrina in 2005 is what fueled the company’s largest and most strategic expansion to-date.
