Recently, the Internet has begun to spread the "black headed shrimp" that cannot be eaten. The Aquatic Products Test Institute of the Agriculture Committee said that the blackness and freshness of the shrimp's head have nothing to do with it, and it is still a normal phenomenon. There is absolutely no problem to eat it.

According to the Fishing Experiment, after the shrimp died in the water, polyphenol oxidase in the body catalyzes the metabolism of tyrosine, which produces melanin, which forms black spots on the surface of the shrimp. It is easy to appear on the head, tail and foot, called "blackening." It is a natural phenomenon, it can be eaten and cannot be the same as fresh. It is only recommended that people store fresh shrimp in a frozen state, preventing temperature changes from being too high and eating them as soon as possible.

The experiment emphasized that shrimp blackening is a normal phenomenon, but Taiwan's concept is not popular and is even misinterpreted as not fresh. To deal with the sale phase, some unscrupulous merchants added borax (sodium borate) to prevent shrimp from turning black. It cannot be ignored that borax is a prohibited product for food processing. When ingested by the human body, it will hinder the absorption of nutrients, which will cause weight loss, which can cause vomiting, erythema, shock and other symptoms of poisoning, and is fatal.

According to the test, there are also unscrupulous people who want to avoid blackening shrimp meat, breaking their heads and pulverizing meat. Lye can also be used as a formaldehyde derivative. It is originally an industrialized product for dyeing technology. It has a strong antiseptic effect. Of course, it also guarantees serious damage to health.

At the end of the experiment, everyone is also taught. In fact, shrimp that are not fresh are very simple to identify. When the head and body of the shrimp are loose and separated, there are unnatural colors and there is an abnormally irritating smell, it is not fresh.
